Greene King is a British pub and brewing company that operates over 2,700 pubs, restaurants, and hotels.  Hungry Horse is part of the Greene King family, where it presently operates 250 sites across the UK.



How Metcalfe helped Hungry Horse Taverns


Problem

Limited by size, each kitchen has two 900mm x 800mm heavy duty gas griddles.  Each unit consumes 103'975 btu (British thermal unit) per hour or 30.5 kWatts of natural gas per hour during service, starting at 8am through to 9pm, 7 days a week.

If more than 3 “mixed grills" were ordered by customers, the griddles would not have the surface capacity for any other menu items such as chicken, fish or more predominantly beef burgers (highest selling item) to be cooked at the same time!

Additionally, after breakfast service, only 3-5 food items would go onto the griddles between 10am and 11.30am (low service) whilst the griddles were both left on full power.






Solution

2 x GSA815S Grill Stations wall mounted & double stacked.

Space saver - double stacking of wall mounted Roband grills.

Grill Stations became the dedicated cookline for all burgers, reducing the cook time from 12 minutes to just 4 minutes.






Result

The introduction of the Grill Stations significantly reduced the workload of the gas griddles, whilst increasing the speed of service and output for other menu items cooked on the grill stations by up to 75% on fish, chicken and burgers.

Huge reduction in energy costs as Grill Stations are now the main cookline during low service, when griddles are powered down.

Conveyor toasters / panini contact grills removed from kitchen; as all types of breads now toasted on the Grill Stations.
