Metcalfe Catering Equipment has always put the environment at the forefront. Being based in North Wales we know how important our natural resources and food are. This is why we launched our Respect The Ingredient campaign.
Many of us have heard of the Zero-Waste campaign, however we feel that first we need to work towards reducing our food waste one ingredient at a time, by respecting every ingredient available to us locally and seasonally.
So how are we making a change? Firstly, with our extensive knowledge and experience, our team of experts and chefs work with our customers to not only specify the correct equipment, but also to look at their full operation and how they can best utilise each ingredient, reducing their carbon footprint and food costs.
We also run various days in collaboration with other similar minded, forward-thinking companies to enhance our customers' understanding about where their food comes from. Building their knowledge around how best to use each ingredient. We also take part in forums and lead the discussions around how we can all work together in reducing our footprint on nature, reducing waste, offering your customers unique ingredients, and reducing your food costs all at the same time.

Fibrous materials like veg stalks can be difficult to process into something useful, or the stalks of herbs which are full of flavour. Using our Pacojet 4 you can simple freeze these down in a beaker with a chosen liquid to compliment your dish. You can then store these in the freezer. When required you simply blend off the exact amount you need. Ensuring the food is fresh and holding its fullest flavour and colour every time.
You can even make great juice shots to sell on like whole ginger frozen in apple juice and pacotised fresh as and when required.
Using one of our Hallde preparation machines you can simply prepare ingredients as and when they are required. Reducing the risk of preparing too much prior to service. Our Hallde machines also reduce prep time massively by being able to produce the perfect cut in a fraction of the time it takes by hand.

Most scales do not have a calibration mode, or you may not have an exact weight to calibrate them. This can cause £100’s if not £1000’s of over portioning. Edlund have fixed this issue with the Poseidon scales. These scales are self-calibrating so you don’t need to send it back.
